Mini North Pole Cakes

Sweet lil peppermint cakes that are so easy to whip up and perfect to take to a Christmas event!
Makes 12 mini cakes

- 1 packet Vanilla Cake Mix I used Countdown brand
- 160 ml milk
- 1 egg
- 60 g butter softened
- 60 g cream cheese softened
- 2 teaspoons peppermint extract
- 150 g white chocolate chips divided
- 1 teaspoon icing sugar to dust
- 6 candy canes crushed
Combine the cake mix, milk, egg, butter, cream cheese and peppermint extract with a cake mixer until smooth and creamy.
Stir in 100g chocolate chips to combine.
Spray or line small cake molds or muffin trays with cooking spray.
Spoon the cake mixture into the cake molds, bake for 18-20 minutes until golden and cooked in the centre.
Remove from the oven and place on a cooling rack, sprinkle with the crushed candy canes.
Once the cakes have cooled completely dust with icing then remove from the cake tins.
