Feijoa Juice

Delicious pulpy Feijoa juice made from sugar syrup and fresh Feijoas.
For this recipe I have started with a sugar syrup that you will only need to use about 1/3 of, you can keep it in the fridge for other drinks/cocktails. I followed the Thermomix sugar syrup recipe guide but you can make this in a saucepan.
You will need a food processor or blender to blitz the feijoas into the juice.

Ingredients
  

Sugar Syrup

  • 200 grams granulated white sugar
  • 200 grams water

Feijoa Juice

  • 50 mls sugar syrup
  • 700 grams feijoa pulp
  • 1250 mls water
  • ice to serve

Instructions
 

To Make the Sugar Syrup:

  • Add the sugar and water to a medium saucepan occasionally stirring over medium heat until the sugar dissolves and comes to a simmer.
  • Pour into a glass bottle, allow the sugar syrup to cool and store in the fridge.

To Make the Juice:

  • In a food processor/blender/thermomix, add in the feijoa pulp, sugar syrup and water.
  • Blitz unto the juice is a smooth consistency.
  • Pour into a large 2 litre capacity bottle and store in the fridge.
  • To serve: pour over ice in a glass

Notes

Drink the juice within a day, it doesn't even last a day in our home it gets smashed back so quickly!
