CRUNCHY NUT CORNFLAKE SLICE

This sweet classic treat combines an irresistible crunch of cornflakes with a gooey caramel nutty goodness bound together by the base and topped with chocolate. Perfect for adding to lunch boxes.

Ingredients
  

Base

  • 180 g butter
  • 30 ml golden syrup or honey
  • 1 teaspoon vanilla extract
  • 115 g brown sugar
  • 140 g plain flour
  • 3 g baking powder
  • 200 g Crunchy Nut cornflake cereal plus extra for sprinkling

Topping

  • 180 g quality milk chocolate like Whittakers
  • Sprinkling of crunchy nut cornflake cereal
  • 30 g Chopped nuts optional

Instructions
 

  • Line a 20cm square baking dish with baking paper and preheat the oven to 180 degrees.
  • Melt the butter and golden syrup together in the microwave or in a small saucepan over low heat.
  • Once the butter has melted add in the vanilla extra and brown sugar, and stir well.
  • Add the flour and baking powder to the melted butter mixture and combine, then add in the crunchy nut cereal until well combined.
  • Pop the mixture into the lined dish and press down evenly with the back of a spoon.
  • Bake for 10-12 minutes until golden, remove from the oven and place on a baking rack to cool.
  • While the slice is cooling, melt the chocolate and stir until smooth.
  • Gently spread the melted chocolate evenly over the slice and sprinkle with the extra cereal and chopped nuts, pop in the fridge to cool completely.
  • Once the chocolate has set and the slice has cooled, remove it from the baking dish and cut it into bars.
