Convenience Food Series: Pancake Mix
Pancake Mix is breakfast convenience at its finest, perfect for family breakfasts and celebrations. I first featured a Pancake Mix Jar on My Food Prep Friday YouTube Episode 4 where I recipe tested the Pancake dry mix and how much mixture would fit into my half-gallon mason ball jar. The following day I cooked the pancakes for the kid’s breakfast, perfecting the pancake jar mix recipe. I have since trialled the Pancake Mix Jar a few more times adapting the recipe as I go. Forget about packet pancake mix, try this tasty pancake mix at home!
Pancakes are extremely convenient, you can serve them with sweet or savoury (leave the sugar out of the recipe) toppings. We love having pancakes for Breakfast for Dinner (Brinner) every fortnight as well as the occasional pancake family breakfast. So having a jar of this pancake mix makes it so easy to whip up a batch of pancakes for breakfast or dinner, I also love making this pancake mix as pikelets (mini pancakes) for a delicious snack and the kids can easily make pancakes too.

How much does this recipe make?
I’m sharing the Pancake Mix recipe below as a 1 batch recipe with the option to easily double or triple the recipe depending on how you want to store and make up the recipe for eating. One batch of this Pancake Mix makes about 12 pancakes.

Pancake Mix Jar
Equipment
- 1 large glass jar
Ingredients
One Batch Pancake Mix:
- 180 grams flour
- 6 grams baking powder
- 10 grams custard powder
- 10 grams milk powder
- 30 grams sugar
- 1 pinch salt
To make up the pancakes:
- 250 mls milk
- 1 tablespoon white vinegar or lemon juice
- 235 grams pancake mix approximately 2.5 cups
- 25 grams butter melted
- 1 teaspoon vanilla extract
- 1 egg
- extra butter for seasoning the pan
Instructions
To make the pancake mix jar:
- Add all of the dry ingredients into your large jar.
- This recipe can be doubled or tripled, check the notes on how to make the pancake mix up to cook.
To cook the pancakes:
- To make the buttermilk, combine milk with vinegar (or fresh lemon juice).
- Leave the milk to curdle while you prepare the rest of the ingredients.
- Give the pancake mix jar a really good shake, then add the pancake mix to a large bowl making a well in the centre of the bowl.
- Melt 25g butter, whisk the melted butter, vanilla and egg into the buttermilk mixture.
- Then pour half of the liquid into the pancake mix well, stir with a whisk to just combine then add in the remaining liquid and whisk until the pancake batter is smooth.
- Heat a large fry pan, adding a slither of butter then cook the pancakes, flipping once the pancake bubbles.
- Serve with your favourite toppings.
