These mini Northpole cakes are super easy using a vanilla cake mix as the base with added cream cheese to add to the fluffy cake texture and peppermint extract to give a true Candy Cane Christmas flavour!

Mini North Pole Cakes
Ingredients
- 1 packet Vanilla Cake Mix I used Countdown brand
- 160 ml milk
- 1 egg
- 60 g butter softened
- 60 g cream cheese softened
- 2 teaspoons peppermint extract
- 150 g white chocolate chips divided
- 1 teaspoon icing sugar to dust
- 6 candy canes crushed
Instructions
- Combine the cake mix, milk, egg, butter, cream cheese and peppermint extract with a cake mixer until smooth and creamy.
- Stir in 100g chocolate chips to combine.
- Spray or line small cake molds or muffin trays with cooking spray.
- Spoon the cake mixture into the cake molds, bake for 18-20 minutes until golden and cooked in the centre.
- Remove from the oven and place on a cooling rack, sprinkle with the crushed candy canes.
- Once the cakes have cooled completely dust with icing then remove from the cake tins.
