Using Kellogg’s Crunchy Nut breakfast cereal is made with flakes of corn, honey, three types of sugar, and chopped peanuts. I love how the slice incorporates the sweet caramelised chewy cornflake texture paired with the peanuts and coated in chocolate!
If you’re not a fan of peanuts, try it with classic cornflakes cereal and don’t add the peanuts!
Crunchy Nut cereal has actually been around slightly longer than me (just a tad bit older, don’t look it up haha) I just love the sweet yet slightly salty, peanut flavour, it just hits differently and I have to admit I love just eating it straight out of the bag!
Who remembers the Crunchy Nut Cereal tv ad where the sheriff flushes out all the criminals with the cereal haha – “I’m coming down, I’m coming down too! – such a classic!

This sweet classic treat combines an irresistible crunch of cornflakes with a gooey caramel nutty goodness bound together by the base and topped with chocolate. Perfect for adding to lunch boxes.
To make this delicious Crunchy Nut Cornflake Slice you just need to combine your base ingredients, (a mixture of caramelised mixture of cereal and flour) and top with quality chocolate, more crunchy nut cereal and optional chopped nuts. I have tested (and photographed) this recipe with milk chocolate and dark chocolate, I’m not sure which I prefer most haha!

CRUNCHY NUT CORNFLAKE SLICE
Ingredients
Base
- 180 g butter
- 30 ml golden syrup or honey
- 1 teaspoon vanilla extract
- 115 g brown sugar
- 140 g plain flour
- 3 g baking powder
- 200 g Crunchy Nut cornflake cereal plus extra for sprinkling
Topping
- 180 g quality milk chocolate like Whittakers
- Sprinkling of crunchy nut cornflake cereal
- 30 g Chopped nuts optional
Instructions
- Line a 20cm square baking dish with baking paper and preheat the oven to 180 degrees.
- Melt the butter and golden syrup together in the microwave or in a small saucepan over low heat.
- Once the butter has melted add in the vanilla extra and brown sugar, and stir well.
- Add the flour and baking powder to the melted butter mixture and combine, then add in the crunchy nut cereal until well combined.
- Pop the mixture into the lined dish and press down evenly with the back of a spoon.
- Bake for 10-12 minutes until golden, remove from the oven and place on a baking rack to cool.
- While the slice is cooling, melt the chocolate and stir until smooth.
- Gently spread the melted chocolate evenly over the slice and sprinkle with the extra cereal and chopped nuts, pop in the fridge to cool completely.
- Once the chocolate has set and the slice has cooled, remove it from the baking dish and cut it into bars.
